When you need an easy dinner to please everyone in the family, look no further than this easy shepherd’s pie recipe.
Traditional shepherd’s pie comes from the UK and features ground lamb. Our Americanized version features ground beef instead, a meat that’s likely already in your freezer.
Shepherd’s Pie Layers
Our easy shepherd’s pie comprises three layers – meat, corn, and mashed potatoes. You can easily change this recipe by adding more vegetables to the second layer. Some people also choose to top shepherd’s pie with a sprinkle of cheese.
Cooking Instructions
To make your shepherd’s pie, brown one pound of ground beef in a medium skillet. Drain the oil from the beef and return it to the skillet. Add in one packet of Lipton Beefy Onion Soup and 1 1/4 cups of water. Bring the mixture to a boil and then simmer on low for five minutes.
Once the beef mixture is done, spread it out in a 9″ casserole dish. Add one can of corn over the top. Alternatively, you can use about two cups of fresh or frozen corn.
For the mashed potatoes, we used homemade, but you can also use prepackaged. (Bob Evans premade mashed potatoes are one of my favorite options for busy nights.) Spread the mashed potatoes over the corn in an even layer.
Cook in a 400°F preheated oven for about 25 minutes or until the gravy mixture is bubbling and the top of the potatoes is slightly browned.
Simple Shepherd’s Pie
Ingredients
- 1 lb. ground beef
- 1 package Lipton Beefy Onion Soup
- 1.5 cups water
- 1 can corn
- 3.5 cups mashed potatoes
Instructions
- Preheat oven to 400°F
- Brown the ground beef in a medium skillet. Drain excess oil and return meat to skillet.
- Add one packet of Lipton Beefy Onion Soup and 1.5 cups of water to the beef mixture. Bring to a boil and then simmer for five minutes.
- Pour beef mixture into the bottom of a 9" casserole pan.
- Layer one can of corn over the beef mixture.
- Top the corn with the mashed potatoes. Spread them in an even layer.
- Bake in a preheated oven for about 25 minutes or until gravy is bubbling and potatoes are slightly brown.
