Homemade chicken and noodles are one of my favorite dishes. I can remember being a child and watching my mom or my grandma make them. I couldn’t wait for them to be done so I could dig into a big ole bowl full. But I also remember having to wait forever. They would make the noodles, then spread them out on a floured surface, and then wait for them to dry. It was a long process, but so worth the wait.
So, when I grew up and started making noodles, I did it the way I had seen my mom and grandma do it. I would make the noodle dough, roll it out, flour it up really good, roll it up, cut the noodles, unroll them, and then leave them to dry on the counter. It was a lot of work and, honestly, a lot of extra steps. There had to be an easier way.
I decided to cut out a few of the unnecessary steps and shorten the process. There was no need to roll out the dough just to turn around and roll it right back up and then unroll it. And, was the drying process really necessary? The answer was no.
Now I roll out my dough, cut the noodles using a pizza cutter, and then add them straight into my broth. There’s nothing like enjoying one of my favorite dishes with less work and less time waiting!
Simple Ingredients
All you need are a few simple ingredients…flour, salt, eggs, and water. And for the broth, you’re going to need a little chicken, some broth, salt, pepper, and celery salt. That’s it; everything you need for a delicious, hearty meal of homemade chicken and noodles!
Homemade Chicken and Noodles
Ingredients
- 2 cups all-purpose flour
- 2 tsp salt
- 2 eggs
- 10 tbsp water
Chicken Broth
- 1½-2 lbs chicken breast
- 48 oz chicken broth
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 tsp celery salt
Instructions
- In a large saucepan, boil chicken breast in 3 cups water until tender. Remove chicken from pan and allow to cool. Shred and return to pan. Set aside and prepare noodles.
- Combine flour and salt. Using wooden spoon, mix in water and eggs. Dough will be thick and hard to stir. Once thoroughly combined, dump onto well floured surface. Use a rolling pin to roll dough to desired thickness (dough should be very sticky and stretchy). Use a pizza cutter or sharp knife to cut into strips of desired length and width.
- Once noodles are cut, pour 48 oz of chicken broth into your large saucepan. There is no need to drain any broth remaining in the bottom of the pan from the boiling of the chicken. To the broth, add 1 tsp salt, 1/2 tsp pepper, and 1/4 tsp celery salt. Bring to a boil. Stir in noodles, dropping them in one at a time and stirring constantly. Once all noodles have been added, reduce heat to a simmer and continue to cook, stirring occasionally until noodles are tender (approximately 20 to 30 minutes).Serve plain, over mashed potatoes, or as a favorite side dish. It's sure to be a family favorite no matter how you eat them!
